I hope some people here can provide answers but the best way to answer questions like this is by experiment. I know of no reason why a small quantity would behave differently from a larger one.
I know that some people from this forum tried the real stuff. Others may know the answers, too. Maybe somebody can tell me.
1. If we (hypothetically) fill the pool with cornstarch/water mixture (say, prepared in a cement mixer), how long would the stuff preserve its properties? A day, a week?
2. How the stuff degrades? Does it become thicker? Does it stratifies? Or maybe it can turn sour?
Don't be afraid of giving me bad advice - I don't plan to make a real pool of cornstarch (don't have resources for that), I don't plan to stuff the pool with helpless damsels (though I like the idea), and I don't plan any pranks. I just have an idea for a storyline, and I want to make it realistic. (In fact, depending on the truth about the cornstarch the story may or may not appear)

A mixture of corn starch and water, mixed as you described, will:
last forever
never stratify or settle
maintain its consistency forever
never go sour
always grip it's victims strongly
will receive it's victims to whatever depth you imagine, even if it is only six inches deep.
