The main difference between these experiments and the applications we are interested in is a lack of containment.
For example, it would have been interesting to see what would have happened if you shot the golf ball straight down into oobleck in a five gallon bucket. That would obviously effect the results with water as well, but I doubt the golf ball would have traveled very far into oobleck, if the oobleck had no chance to disintegrate/escape.
But really, for us, it's a matter of how strong oobleck is when it grips. And the answer is simple enough - the stronger you are, the stronger it becomes.
