I'm not entirely sure, but I heard rumors that Mario Kart World has mud that you can sink in. It even leaves you coated! Boo Cinema seems to be the main place for this, from what I've seen.

Turns out that the rumors are true. There is sinky mud in Mario Kart World.

It's chocolate and acts like quicksand. It even sticks to the victim for a bit.

There's a part in Deltarune that parodies Zelda where, if you drink all of the water in an oasis, the spring turns into quicksand. You can have Susie throw Ralsei into it to reference a presentation the game's creator was in about quicksand.

In the current limited-time event in Genshin Impact (version 6.1 aka "Luna II"), an important plot point revolves around some ruins that are entered via desert quicksand. Unfortunately, there's an invisible wall preventing you from physically interacting with it in the game world, and the quest trigger just teleports you straight inside the domain without a cutscene.
