Some finds from indie games that I happened to stumble upon:

Game Title: Crisis Point: Extinction
Platform: PC
Area Number/Name: The Summit
Notes: The tar pits here serve to prevent progress to the next area until this area's boss is defeated.

Game Title: Hakoniwa Explorer Plus
Platform: PC
Area Number/Name: Grottee Marsh, Phucken Marsh
Notes: The former area features poisonous swamps, while the latter has swamps large enough to pose a problem in mobility.
* That video game quicksand collector your parents warned you about.

Not exactly sinking but the game "Herc's Adventures" for Playstation and Sega Saturn features muddy terrrain that slows you down.

Red Dead Redemption 2 has some very decent mud. Like the mud in GTA V, it changes your character's movement animations to more of a slow, clumsy trudge, and makes appropriate noises... but building even further on what GTA V started, the mud now:
1. ...is much more common, and varies fairly widely in depth (up to about knee deep from what I've seen; deep enough to impede movement and make a mess, but never deep enough to pose a sinking hazard unfortunately)
2. ...gradually clumps up and persists on bodies and clothing (in the main story, you'll sometimes need to take a bath, swim, or change clothes to get clean, but in the online multiplayer it just seems to fade away after a few minutes), and...
3. ...deforms around anything tossed into it, meaning players, NPCs, and animals will leave a trail of muddy footprints in their wake when trudging through a swamp, or even a full body imprint if you were to, say, fall off your horse and into deep enough mud (or toss someone in!)

Of course, both of the playable characters in the single-player story are male, and the character creator in multiplayer is... not ideal (any character you make is meant to look like a thuggish, possibly-inbred outlaw, regardless of whether they are male or female... expect missing teeth, sun-ravaged skin, ratty hair, etc. no matter how hard you try to make a normal-looking character.) Hopefully this will change in future patches, DLC, or mods.

In any case, between this and Shadow of the Tomb Raider, I must say I'm really pleased with how elaborate and immersive these mud systems are getting in modern games. I think we have a lot to look forward to in the future!

In "The Tuttles Madcap Misadventures"

At chapter 13, 14 and 15 I believe, There is quicksand, and you play as Barbara there...

You can escape by jumping out if it in the game...

I wonder if Elefseus can make a video of the quicksand if they can find the game that is...

The quicksand in that game looks pretty nice. Comparable to Half-Genie Hero's, even...

Even better. In both single player and online, you have a lasso you can use to hogtie NPCs, put them on the back of your horse, and bring them wherever you want.
